Join James Beard Award winning author and bread baker extraordinaire Sarah Owens for a special workshop on baking with sourdough at Brot Bakehouse School and Kitchen in Vermont. Sarah is a California-based cookbook author, baker, professional horticulturist, culinary instructor, and a teacher of nourishing food traditions.
What can you expect from this workshop?
Sarah will lead you through the basics of fermentation, explaining the alchemy of maintaining a rye starter and also desem culture so you may create delicious sourdough breads at home. You will be led through the whole cycle of making a sourdough hearth as well as a rye loaf, from mixing to shaping, proofing, scoring techniques, and finally baking in the wood-fired oven. You will also make sourdough flatbreads and bagels and even fermented pie crust for your favorite fillings!
Brotbakery works with locally grown grains and mills their own flours on site, so attendees may gain a solid understanding of flour selection and use of different grains in breads and pastries when taking skills home.
Every participant will receive their own starter culture and a recipe booklet, so you are ready to embark on your sourdough adventure!
